some of our favorite(home)things: grandma’s chicken thing

i blog primarily to document my life. our lives in and around the agapeshack.

we’ve been painting the wrong picture for you…..we don’t eat out all the time…we actually cook a lot. especially after theresa finished classes at the french culinary institute.  and especially since grandma is with us, cooking korean everyday. so as we transition into our baby days and eating out less….here are some of the everyday things we eat…because we cook them on a regular basis.

my history with this dish…my favorite dish of grandma’s…theresa’s favorite dish of grandma….nearly every cousin of theresa’s favorite dish of grandma…starts out in la before she came to live with us. we would visit her every year and that first year, she was going to cook for me as part of a welcome dinner. i was nervous. would it be too spicy for me? what’s in it? what is it? what kind of chicken?

theresa gave me minimal details. it has chicken. some veggies. and potatoes. and its good. that’s what she told me.

i asked for perhaps a name….for the dish? the response was…..chicken thing????

chicken thing was not sounding good. but that seems to be what all the cousins call it too.

since i work with words for a living, i will attempt to describe it a bit better. its a slightly spicy, savory chicken stew with carrots and potatoes, onion and garlic. and crack cocaine. it is amazing. i could eat this all the time. every meal.

come on over sometime and request the chicken thing.

here’s a shot of the meal in context with other korean side dishes, theresa in her husband beater and zoe just sick to her soul that she can’t have any chicken thing yet and has to eat baby food. she clearly wants table food.

since this shot, zoe has had some of the sauce and chicken. and maybe even some of the veggies.

some of our favorite home things: crabs and steak at the md pak home

here’s a mix entry….both a home meal and one that is outside of nyc! at theresa’s md home!

as the magical fall descends, we will finally be able to travel as zoe has hit that critical three month mark. we passed on many a wedding and opportunity to travel in between her birth and this past weekend. up first, we have maryland on our mind.

we’ve been painting the wrong picture for you…..we don’t eat out all the time…we actually cook a lot. especially after theresa finished classes at the french culinary institute. so as we transition into our baby days and eating out less….here are some of the everyday things we eat…because we cook them on a regular basis…as well as some food that we ordered in…..

up first at zoe’s 100 day celebration was lunch which was a crab fest. theresa’s parents order a few boxes of female crabs which contain the coveted eggs as a bonus eat. i’m not that into crabs but of course theresa is super into them. not being used to opening them, i am prone to get cuts…and then i don’t even do it right leaving not enough meat exposed…and wasted. i wind up being very hungry….and angry.

so theresa and i have a deal….she can order crabs. but she has to help me dig out my meal.

if it were up to me, i’d be ordering crabcakes! these crabs are so much work! but that’s part of the experience that she looks forward to.

for dinner, something more to my liking….and i’m not the only one. uncle rob, the white guy in the family, marinates and grills a great steak. i offer to pick some guinness and we share an irish moment together as i’m thinking about my boy q’s recent trip to ireland and my upcoming vacations to see theresa’s irish friends.

some of our favorite(home)things: spaghetti and meatballs

i blog primarily to document my life. our lives in and around the agapeshack.

we’ve been painting the wrong picture for you…..we don’t eat out all the time…we actually cook a lot. especially after theresa finished classes at the french culinary institute. so as we transition into our baby days and eating out less….here are some of the everyday things we eat…because we cook them on a regular basis.

this isn’t really cooking but it was a constant in our pre-pregnancy days. we usually go with rao’s arrabiata sauce which is a nicely spiced spicy red sauce that i can likely eat alone over pasta and be very happy. but we also add smoked mozzarella(we aint making that on our own)and italian meatballs from the local grocer.

do we make anything? i do try to make the pasta al dente!

we took a break from the meatballs during theresa’s pregnancy because we don’t trust ground meat. i think doctors tell you not to eat while pregnant. or at least it shows up on a few do not eat lists. maybe a little cautious but in general we are agnostic toward ground up meat products….which is not that crazy.

but zoe’s here…so the risks are lower. at least to zoe!

this is likely the wave of the future….semi-prepared meals…not quite eating out…not really “cooking”.  its certainly cheaper than eating out!

and its the quality of the ingredients that make the meal. no one i know is smoking mozzarella….and i want meatballs with italian sensibilities not asian ones.

i like how we are recreating the vibe of the recent clinton north korean visit.

some of our favorite(home)things: oxtail soup

we’ve been painting the wrong picture for you…..we don’t eat out all the time…we actually cook a lot. especially after theresa finished classes at the french culinary institute. so as we transition into our baby days and eating out less….here are some of the everyday things we eat…because we cook them on a regular basis.

we’ve been eating a lot of korean food at our house lately because grandma cooks. my girl, grace choi must be laughing her head off!

korean meals on a day to day basis are pretty simple…preserved veggies…some soup…some sort of main dish. much like what we have on the table. today’s main item is this delicious oxtail soup that grandma cooks for hours until the meat is tender. a little salt, pepper and or soy sauce and i can eat this almost everyday with rice. grandma serves this with tofu fried in egg with said soy sauce with sesame seeds. i’m all set.

raising up zoe pax has been a family affair. theresa and i are busy enough feeding, changing, burping, holding z that we have little time to think of food let alone planning to have good grub for ourselves. luckily we roll with a large entourage. here theresa’s mom and grandma are bbq’ing some pork belly aka meaty bacon. they have also cooked some clear noodles with beef with the usual roster of small korean appetizers.

my mom is also here putting the touches on 2 chinese chickens along with soup.

we are not just eating…we are feasting on a regular basis because our family is around and involved. plenty of leftovers deep into the week.

enough even for visitors! ricky and annie brought drinks to add to our banquet. they were thinking of bring over shake shack but i discouraged them because of the bounty we have….and encouraged them to come over as quickly as they could because the food was getting cold!

then again….it might be only a village of women at work. the men got to play with and stare at zoe while the ladies worked. they did help eat.

no restaurants for awhile during theresa’s healing….but we’re not missing much.

we throw dinner parties quite a bit with friends….especially when there are visitors from out of town…..the s-o-d-a, the lambic framboise and the wine are flowing…..

and the legendary cajun roast is in the oven….marinated for a few days and then slow cooked for a few hours until a juicy medium…with many parts medium rare. those who like it cooked more, can nuke it or feast on the burnt ends.

most agreed with theresa but as you can see, val who is allergic to the cow…well, we got her some latin chicken from around the corner.

people ask pregnant ladies if they have any unusual food cravings. theresa usually answered-no. that is, not more than usual unusual.  as you will soon see…

don’t know what mood we were in this morning but you start with wings marinated in something savory…i think some barbecue sauce. that’s a safe bet in the tsang household. i can eat bbq everyday…..

then you cook up little pancakes and top with blueberries. some oj and french press coffee….and viola! some version of chicken and waffles for brunch. the sweet and savory experience is what i suspect we were longing for and we got that. victor and jenn seemed to enjoy it. we enjoyed teaching them how to make it so they can do so on their own one day maybe.

we love inviting a few people over to share the goods since we can’t and shouldn’t finish all of this food. tonite, its regular resident steph and occasional guest star of club vision, peili. she entertained theresa when she said in response to if she ever cooks……that she made brunch once. quickly pei li learned how silly she is.

this is what’s on the menu tonite…..arugala salad with an olillieberry dressing, roasted veggies/potatoes and roasted pork loin.

the secret and flavor? butter. (that’s not really a secret).

peili was thoroughly impressed. steph knows that this is how we usually roll. try to get invited.
